Cup Profile:

  • Fragrance and Aroma: Bursting with tropical fruits, grapefruit, floral notes, and a refreshing hint of peppermint.
  • Taste and Aftertaste: A medley of flavors like red apple, watermelon, red fruits, and cocoa blend harmoniously with green tea and a delightful peppermint freshness. Balanced with malic acidity and a creamy body, the cup rounds out with a prolonged, exotic residual reminiscent of guanabana fruit.

Fermentation Process:
The cherries undergo a careful selection process before entering fermentation. They are placed in special tanks that allow airflow but are not sealed, promoting natural fermentation for 48 hours. The sugars in the cherries intensify the flavor complexity, with temperatures closely monitored every 6 hours to ensure they stay below 30ºC. This controlled fermentation enhances the fruity, aromatic qualities of the coffee.

Drying Process:
After fermentation, the cherries are placed in a mechanical dryer for 48 hours, followed by an additional 8 days of sun-drying on a solar patio. This precise drying process ensures the preservation of the coffee’s delicate flavors, resulting in a vibrant, fruit-forward cup.
