From the renowned Granja La Esperanza in Valle del Cauca, this Geisha Hybrid Washed coffee offers a truly unique and complex cup, combining the rare Geisha variety with an innovative hybrid washed process that brings out the most intricate flavors and aromas.

Cup Profile:

  • Fragrance and Aroma: Jasmine flower, red fruits, lemongrass, and a delicate hint of vanilla.
  • Taste and Aftertaste: A bright and refreshing complexity with layers of grapefruit, caramel, melon, and subtle notes of green apple and citronella. The coffee features a distinctive malic acidity with a smooth, creamy body, providing a balanced and memorable aftertaste.

Process:

Fermentation Process:
The Geisha cherries are picked manually with great precision, undergoing a two-step fermentation process to enhance their profile. The first phase occurs in whole cherries for 19–22 hours without water. Once the skin is removed, the second fermentation takes place in parchment and mucilage for an additional 35 hours, creating an exceptionally complex cup.

Drying Process:
After the washing process, the beans are carefully dried in a mechanical dryer, with temperatures maintained between 35°C (95°F) and 45°C (113°F) to ensure a consistent and precise drying process. This results in a final humidity level of around 10.5%, preserving the vibrant and refined flavors.
